牛排要幾分熟的英語怎么說

　　平時看美劇、看港劇的時候經常看到劇中角色去吃牛排，有些人喜歡三分熟的牛排，而有些人喜歡五分熟的牛排，但是似乎沒有人喜歡吃全熟的.牛排？三、五、七分熟的牛排又什么區別？今天我們就來一起學習一下吧！

　　近生牛排（Blue)：

　　正反兩面在高溫鐵板上各加熱30~60秒，目的是鎖住牛排內濕潤度，使外部肉質和內部生肉口產生口感差，外層便于掛汁，內層生肉保持原始肉味，再者視覺效果不會像吃生肉那么難接受

　　一分熟牛排（rare）：

　　牛排內部為血紅色且內部各處保持一定溫度，同時有生熟部分。

　　三分熟牛排（medium rare）：

　　大部分肉接受熱量滲透傳至中心，但還未產生大變化，切開后 上下兩側熟肉棕色，向中心處轉為粉色再然后中心為鮮肉色，伴隨刀切有血滲出。（新鮮牛肉和較厚牛排這種層次才會明顯，對冷凍牛肉和薄肉排很難達到這種效果）

　　五分熟牛排（medium）：

　　牛排內部為區域粉紅可見且夾雜著熟肉的淺灰和綜褐色，整個牛排溫度口感均衡。

　　七分熟牛排（medium well）：

　　牛排內部主要為淺灰綜褐色，夾雜著少量粉紅色，質感偏厚重，有咀嚼感。

　　全熟牛排（well done）：

　　牛排通體為熟肉褐色，牛肉整體已經烹熟，口感厚重。
